With the festive season just around the corner, it can be tricky sticking to health and nutrition goals. Our solution? Offer to bring a healthy dish to your Christmas party! Your friends, family and colleagues will appreciate the effort, and you can rest assured there will be something ‘waist friendly’ for you to tuck into!
Here are some foodie recipes for you to show off at your next big event that are both nutritious and delicious:
Mediterranean antipasto platter:
No food prep required here! Simply scatter your favourite Mediterranean ingredients onto a board or tray – we suggest fresh olives (in brine, not oil), fresh cut raw vegetables, roasted vegetables in olive oil, smoked salmon, wholegrain crackers or sourdough bread slices, roasted nuts, olive-oil or yoghurt-based dips (i.e. hummus, eggplant, tzatziki), and feta cheese. You can even get fancy and arrange some of these ingredients on skewers – for example, a Greek salad skewer of cucumber, tomato, olives and feta drizzled in vinaigrette.
‘Rudolph nose’ bliss balls
Super easy to make, and a favourite of both adults and children! Simply blitz 1 cup of raw almonds, ½ cup desiccated coconut, 1 cup of frozen raspberries and 3 pitted dates in a food processor of blender. Roll into small balls and freeze until ready to serve. If the balls are too wet, add additional almond meal or oat bran. For a touch more sweetness, try adding 1tbs honey or 2-3 extra dates.
Mango and passionfruit trifle cups
These desserts are as attractive as they are delicious! First, combine 2 cups of natural Greek yoghurt with ¾ cup fresh passionfruit pulp. And ad an optional 1tbs honey if you like it sweet. Place a small dollop of yoghurt mix in a small serving glass, then layer with 1-2tbs toasted granola (homemade, or if you’re buying from the store we suggest Carmen’s Fruit Free Muesli or Jordan’s Crunchy Oat Granola Extra Nutty). Add another layer of yoghurt, then top with fresh diced mango. Finally, add your third layer of yoghurt, and top with frozen/fresh raspberries, shaved coconut and slivered almonds.
Lemon and ginger mini cheesecakes
Everyone loves cheesecake – and this much lighter version won’t disappoint! Combine 2 cups of cottage cheese with 2 cups of Greek yoghurt, 4tsp lemon juice, 2tsp lemon zest, and 1-2tbs honey (adjust to taste). Set aside whilst you blend 2 cups of roasted almonds with 2/3 cup crystallised ginger. Layer the almond mix with the cheesecake filling and refrigerate until ready to serve.
Strawberry, apple and mint mocktail
Most of us are aware that indulging in too much cake or chocolate can wreak havoc on your waistline. But have you considered the effect of excess alcohol? Balance out your booze intake with this refreshingly light mocktail. Puree two 250g punnets of strawberries in a food processor until smooth. Combine with 500ml of unsweetened, natural apple juice or coconut water. Strain this liquid into a serving jug, then refrigerate. When ready to serve, add 1L of sparkling water to the juice and fresh mint leaves. A decent squeeze of lime adds a nice finishing touch.
